These sizzling hibachi-style beef bites are inspired by classic Japanese teppanyaki steakhouse dishes. Tender cubes of sirloin or strip steak are seared to perfection, then glazed with soy sauce and garlic butter for rich umami flavor.   • 2 lbs sirloin or New York strip steak cut into 1-inch cubes
  • 1 tablespoon neutral oil canola or avocado
  • Salt and black pepper to taste
  • 3 tablespoon soy sauce
  • 1 tablespoon garlic butter see notes
  • Optional garnish: sliced scallions or toasted sesame seeds

Instructions:

  • Preheat a flat-top grill or heavy skillet over high heat until just smoking.
  • Pat steak cubes dry with paper towels. Season with salt and pepper.
  • Add oil to the hot surface. Sear beef in a single layer for 1–2 minutes per side, until nicely browned but still juicy inside.
  • Reduce heat to medium. Add soy sauce and garlic butter. Toss beef to coat and glaze for 30 seconds to 1 minute.
  • Remove from heat. Garnish with scallions or sesame seeds if desired.
  • Serve hot with hibachi fried rice, noodles, or grilled vegetables.

Notes

Chef’s Notes:
Garlic Butter: Combine 1 stick of unsalted butter with 2 cloves garlic (minced), 1 teaspoon soy sauce, and ½ teaspoon lemon juice.
For extra flavor, let steak marinate in 1 tablespoon soy sauce and 1 teaspoon mirin for 15 minutes before searing.
Use well-marbled beef for the best result—don’t overcook.
