Caribbean Jerk marinade is a flavorful and spicy seasoning blend that hails from the islands of the Caribbean, particularly Jamaica. Ingredients

  • 3-4 Scotch bonnet peppers (adjust to your spice tolerance)(you can substitute jalapenos)
  • 6 cloves of garlic, peeled
  • 4 bn green onion, roughly chopped
  • 1/2c ginger
  • 1/4c garlic gloves
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 teaspoons ground allspice (pimento)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 tablespoon brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 tablespoons malt vinegar (you can substitute apple cider vinegar)
  • 1/4c lime juice
  • Salt and black pepper to taste

  1. Prepare the Peppers: Be cautious when handling Scotch bonnet peppers, as they are extremely hot. You may want to wear gloves or wash your hands thoroughly after touching them. Remove the stems and seeds from the peppers, then roughly chop them.
  2. Blend the Marinade: In a food processor or blender, combine the chopped Scotch bonnet peppers, ginger, garlic cloves, chopped onion, green onions, fresh thyme leaves (or dried thyme), ground allspice, ground cinnamon, ground nutmeg, brown sugar, soy sauce, vegetable oil, vinegar, and the juice of the limes. Blend until you have a smooth and vibrant marinade. Taste and adjust the salt and black pepper to your liking. Remember that Jerk marinade should have a good balance of spicy, sweet, and savory flavors.
  3. Marinate your Protein: Place your choice of protein (chicken, pork, beef, shrimp, tofu, or vegetables) in a large resealable plastic bag or a container with a lid. Pour the Caribbean Jerk marinade over the protein, ensuring it's evenly coated. Seal the bag or container and refrigerate for at least 2 hours, or ideally overnight for the best flavor.
  4. Grill, Roast, or Cook: Preheat your grill, oven, or stovetop pan to medium-high heat. Remove the protein from the marinade and cook according to your preferred method until it's cooked through and has a beautiful charred exterior. Baste with extra marinade while cooking for an added burst of flavor.
  5. Serve: Once your Caribbean Jerk-marinated dish is cooked to perfection, serve it hot with traditional sides like rice and peas, fried plantains, or coleslaw. Garnish with fresh chopped cilantro or additional green onions for a burst of color and flavor.
